Remember: heat, light, and air destroy the vegetable oils we use for cooking; and this destruction leads to inflammation in our body cells.
Olives and coconuts contain oils whose properties are denigrated less quickly by these three elements and if cooked with low heat (not burning), will not cause inflammation in the body.
Eat fats wisely.
Do not eat, with any regularity, partially hydrogenated oil, hydrogenated oil, mono-diglycerides or any other processed fat-like substances.
We need to be as persnickety about our intake of fats as we are about the car we choose to drive. Praise God, folks who do not have the car they would like to drive do have a choice about the fats they feed their body!
Any molecule which is “non-water-soluble” must be processed by the liver. This includes all fats and fatty molecules.
Just because a “label” says “0 trans fats or 0 grams of saturated or unsaturated fats” does not mean said food has no fatty-”like” molecules which in fact, add to inflammation in body cells.
Cholesterol (a waxy, fatty substance) is made by the liver and is the precursor of Vitamin D, the sex and adrenal hormones. Cholesterol is the precursor of bile.
Bile is also made by the liver and is the envoy to which many non-usable, non-water water soluble molecules bind for excretion in the large bowel. Additionally, bile emulsifies (breaks down) cholesterol, fats, and other non-water soluble molecules in the small bowel.
This is amazing, God’s creating, cycling, and re-cycling the stuff of which we are made.
God is the Ultimate Recycler.
